Dexterity
Musketeers / builders
Affects attack power and accuracy of firearms, blocking rate, critical rate, attack speed of light weapons. Also increase damage of built turrets and blades.
Intelligence
Wizards / Elementalists
Determines magical attack power and elemental resistances.
Charisma
Summoners/ Builders
Affects the overall power of summoned monsters, and Health of turrets, & blades.
Combat Stats
AR - Attack Rating (1 per 4 lvls + weapon)
ATK - Current attack strength for all types of attacks (magic, ranged, & melee)
ACC - Your chance at hitting for full (max) damage
Speed - Time it takes for 1 attack cycle. (swing of a sword, shots of pistols, etc)
Critical - Chance to cause double damage on a sucessful attack
DR - Defense Rating (1 per 4 lvls + armor)
DEF - Current Physical defense
Evasion - chance to avoid a melee attack (cannot evade bullets or magic)
Block - Chance to block nonmagical attacks (max 75)
Absorb - Negates equal amount of penetration ability from weapons or buffs

To add a couple things:
From my own observation, 100 Attack Speed is equivalent to one hit (not one attack round) per second. Therefore, a character with 40 Attack Speed hits 2.5 times per second. A character with 25 Attack Speed on a stance which hits twice, such as Hack and Slash, unleashes 2 rounds of 2 hits each per second.
The maximum Attack Speed for a stance is ( 40 / number-of-hits-per-round ). i.e., 40 for 1 hit, 20 for 2 hits, 13 for 3 hits, and 10 for 4 hits.
Block: Maximum is 75 in most stances which provide it. The Defender is an exception and has a max of 85.
Evasion: Maximum is also 75.
